Het begon in 1987 in Bedizzole (BS), in het hart van het landelijke platteland van Brescia. De grootste avonturen beginnen altijd met een daad van moed, of ze nu klein of groot zijn. Ons gebaar was meer een gebaar van vertrouwen richting nieuwe voedseltechnologieën, en in het bijzonder richting nieuwe technieken voor het invriezen van voedsel. In de loop van een decennium is Alcass dankzij belangrijke innovaties uitgegroeid tot een echte koelspecialist en pionier in de sector. In 2005 werd, sterk gewenst door het topmanagement, het merk "Amica Natura" geboren, dat al snel een van de meest populaire merken werd.
