Kirinzan Brewery is a craft-scale sake producer in Aga Town, Niigata, named after nearby Mt Kirin. The brewery produces junmai, ginjo, and daiginjo styles, with a focus on dry, clean-tasting sake characteristic of the Niigata region. Internationally active, the first Japanese sake brewery to receive DX certification.
