Herstellung von weichem italienischem und kaukasischem Käse
Burrata, ein italienischer Frischkäse aus Sahne und Vollkuhmilch; gehört zur Familie der Mozzarella-Käse. Erfinder Lorenzo Bianchino, der in der Region Apulien in Süditalien lebte. Zu der Erfindung, die in den 1920er Jahren stattfand, kam der Zufall. Wegen des starken Schneefalls war es unmöglich, die Milch in die Stadt zu transportieren, aber der Käser durfte nicht zulassen, dass die Milch verdorben war. Die entstandene Sahne gab er in einer Mozzarellaschale in die Milch, wie es manchmal gemacht wurde, um die Butter frisch zu halten. Daher der Name des Käses, der „butterartig“ bedeutet. Später wurden mit Sahne vermischte Mozzarellafäden in die Schale gegeben. Dank seines delikaten Geschmacks hat Burrata in relativ kurzer Zeit große Popularität erlangt und gilt heute als Delikatesse.
