Producción de quesos blandos italianos y caucásicos.
Burrata, un queso fresco italiano elaborado con nata y leche entera de vaca; Pertenece a la familia del queso mozzarella. Inventor Lorenzo Bianchino, que vivía en la región de Apulia, en el sur de Italia. El invento, que tuvo lugar en los años 20, fue fruto del azar. Debido a las fuertes nevadas, fue imposible transportar la leche a la ciudad, pero el quesero no podía permitir que se estropeara. Colocó la crema resultante en la leche en una cáscara de mozzarella, como se hacía a veces para mantener fresca la mantequilla. De ahí el nombre del queso, que significa “mantecoso”. Posteriormente se añadieron dentro de la concha tiras de mozzarella mezcladas con nata. Gracias a su delicado sabor, la burrata ha ganado gran popularidad en relativamente poco tiempo y ahora se considera un manjar.
