La materia prima es de altísima calidad porque se selecciona siguiendo las estrictas especificaciones impuestas por el consorcio. La gran pasión de Angelo, el respeto por la naturaleza y el conocimiento del arte de la carnicería, junto con la maduración en las antiguas bodegas abovedadas de ladrillo y el clima húmedo y frío de los meses de invierno, completan la partitura generando una sinfonía de u.
