C'est ainsi qu'est née CARNI VALLEBELBO. Au départ, il y avait dix-sept membres, tous éleveurs de bovins, porcs et chèvres, leur courage était louable, tout comme leur détermination dès le début, il était entendu que la seule façon d'avancer était de se concentrer uniquement sur la qualité, en utilisant des techniques préparatoires et conservatrices adoptées dans les familles Langa. C'est ainsi que naissent divers produits : le salami cuit classique, le salami magronetto cru, la pancetta pressée, la coppa, le cotechino local.
