Wahaka Mezcal è stata fondata nel 2008 a San Baltazar Guelavila, Oaxaca, dal maestro mezcalero di quarta generazione Alberto Morales López, producendo mezcal tradizionali da espadín, tobalá, tepeztate e specie di agave selvatica. I prodotti vengono esportati verso importatori di liquori speciali in Nord America ed Europa.
