Produzione di formaggi molli italiani e caucasici
Burrata, formaggio fresco italiano a base di panna e latte vaccino intero; appartiene alla famiglia delle mozzarelle. Inventore Lorenzo Bianchino, che visse nella regione Puglia, nel sud Italia. L'invenzione, avvenuta negli anni '20, fu aiutata dal caso. A causa delle forti nevicate era impossibile trasportare il latte in città, ma il casaro non poteva permettere che il latte si deteriorasse. Metteva la crema ottenuta nel latte in un guscio di mozzarella, come talvolta si faceva per mantenere fresco il burro. Da qui il nome del formaggio, che significa “burroso”. Successivamente all'interno del guscio venivano aggiunti fili di mozzarella mescolati a panna. Grazie al suo gusto delicato, la burrata ha guadagnato in un tempo relativamente breve grande popolarità, tanto da essere considerata una prelibatezza.
