SO Appenzeller Käse GmbH is the exclusive marketing and sales organization for Appenzeller, one of Switzerland's most beloved protected-designation cheeses made in the Appenzell region of northeastern Switzerland. The consortium oversees the production of Appenzeller by a network of licensed dairies that follow the closely guarded herbal brine recipe, applying it during the cheese's distinctive rubbing and aging process. Appenzeller is produced in three variants -- Classic, Surchoix, and Extra -- each differentiated by aging time and intensity. It is exported to leading supermarket chains, cheese specialists, and delicatessen importers worldwide. Key markets are Switzerland, Germany, the United States, France, and Austria.
