Wahaka Mezcal foi fundada em 2008 em San Baltazar Guelavila, Oaxaca, pelo maestro mezcalero de quarta geração Alberto Morales López, produzindo mezcals tradicionalmente elaborados a partir de espécies de espadín, tobalá, tepeztate e agave selvagem. Os produtos são exportados para importadores de bebidas espirituosas especiais na América do Norte e na Europa.
