Production of soft Italian and Caucasian cheeses

Burrata, an Italian fresh cheese made from cream and whole cow's milk; belongs to the mozzarella cheese family. Inventor Lorenzo Bianchino, who lived in the region of Apulia in southern Italy. The invention, which took place in the 1920s, was helped by chance. Due to heavy snowfall, it was impossible to transport the milk to the city, but the cheese maker could not allow the milk to spoil. He placed the resulting cream in the milk in a mozzarella shell, as was sometimes done to keep the butter fresh. Hence the name of the cheese, which means “buttery”. Later, strings of mozzarella mixed with cream were added inside the shell. Thanks to its delicate taste, burrata has gained great popularity in a relatively short time, and is now considered a delicacy.
