Matagalpa bulut ormanında 1.200-1.600 m yükseklikte Selva Negra, muz ve yerel ağaçların gölgesinde gölgede yetişen Bourbon, Caturra ve Typica arabicas'ı yetiştiriyor. Ürünler arasında yıkanmış ve bal ile işlenmiş yeşil kahve ve sertifikalı organik kavrulmuş kahve yer almaktadır. ABD, Almanya ve Japonya'daki özel kavurma makinelerine satılır. Kupa skorları: 85-88.
